Onam is nearing.An important part of Onam is food.Onasadhya consisting of a wide variety of food items fills the heart and stomach of everyone.So let’s learn how to make palakkad style avial.The quantity here mentioned is for a small family with three or four members.
Ingredients :
Carrot
Beetroot
Cucumber
Drumstick
Plantain
Snakegourd
Ashgourd
Yam
Chilly
Coconut oil
Grated coconut
Cumin
Curd
Curry leaves
Salt to taste
Firstly choose any vegetables of your choice.Here we use vegetables like Carrot,Beetroot, Ashgourd, Plantain, Cucumber,Drumstick,Yam,Snakegourd etc.
Cut all the vegetables vertically with same size, wash well and drain the water completely.Now place it into a cooker.Add three chillies,2 tbsp of coconut oil and salt to taste.There is no need to add water as the veggies have water content in it.If doubted, you can add two or three tbsp of water.Now place it on the burner on medium flame.
Adding coconut oil is to enhance it’s taste.Here we use cooker for convenience.You can choose any pot of your choice.
Now take 2 tbsp on grated coconut, 2 chillies and 1/4 tsp of cumin.Gently crush it in the mixer without grinding it to a paste.
Open cooker soon after the first whistle and let the steam go out manually.Drain water by heating if any left.Add 4 tbsp of curd to this and mix it until there are no lumps.If curd is not available you can add some pieces of mango or use sambar tamarind.
Now add the coconut mix stir gently and leave it for two minutes.After that add some curry leaves and 2 tbsp of coconut.Yummy yum avail is ready!
