Do not keep the baking powder left open or do not keep it in fridge. it is better to use the baking powder kept in room temperature. Use an air tight container to store baking powder. It is not necessary to keep the sponges in the fridge to use for next day.It can be kept in the room temperature itself by keeping it in a air tight container or covering it with a food wrap.
